Ingredients

1/4 cup (60ml) extra virgin olive oil

2 garlic cloves, crushed

2 long green shallots, thinly sliced

1/3 cup (105g) white (shiro) miso

4 cups (1L) Chicken Stock

1 tbs finely chopped ginger

400g pork mince

1/3 cup (100g) hot chili condiment

2 tbs rice vinegar

1/4 cup (60ml) light soy sauce

1 tsp sesame oil

4 x 180g packets ramen noodles, cooked according to packet instructions

Soft boiled eggs

Sesame seeds

Seasoned nori

Directions

  1. Heat olive oil in a large pot over medium heat. Add crushed garlic and sliced shallots, sauté until fragrant.
  2. 2. Stir in white miso paste and chicken stock, then add chopped ginger.
  3.  In a separate pan, brown pork mince until cooked through.
  4. Add hot chili condiment, rice vinegar, light soy sauce, and sesame oil to the pork.
  5. Pour the pork mixture into the pot with the broth and let simmer for 10 minutes.
  6. Meanwhile, prepare soft-boiled eggs to your liking and set aside.
  7. Cook ramen noodles according to package instructions, then divide among serving bowls.
  8. Ladle the hot broth and pork mixture over the noodles.
  9. Halve the soft-boiled eggs and place them on top of each bowl.
  10. Garnish with sesame seeds and seasoned nori.
